Fleur Nisbet
When asked about what I do for a living I always say ‘I have the best job in the world’ most people agree with me once I have told them what I do! I have been involved with Green Craig since its conception four years ago, throughout all the renovations. It was my privilege to be able to decorate and furnish this lovely property and return it to its former glory as a stunning home. Previously I ran a similar business for over 10 years in Gullane. It is important to me that my guests get the most out of their stay at Green Craig and local knowledge is paramount. I am passionate about Green Craig and East Lothian and all it has to offer to my guests.

Norma Van Weegan
Norma, our chef at Green Craig is in fact our secret weapon! With over 30 years of experience in the catering business, either running her own restaurant or catering company she is one of the most experienced chefs we could ask for. Her dedication to her art is phenomenal and this is evident in the comments we receive from guests who dine at Green Craig. Her dinners at Green Craig are now becoming the most requested place to eat – returning guests inevitably increase their dinners in so that they can sample more of Norma’s cuisine. Her recipes are much sought after and it is quite normal to find guests in the kitchen after dinner writing down recipes from Norma! So we have given Norma some web space for some of her most requested recipes.

Isaac Spencer
Isaac is our butler at Green Craig. He can be requested by groups if they require his services during their stay. His attention to detail is outstanding and our groups inevitably want to take him with them when they leave! He offers a personal service to the guests be it serving cocktails in the evening, unpacking suitcases, as a master of ceremonies or even serving canapés and drinks on the lawn during a chipping contest! If you would like the added extra service that Isaac supplies please let us know and we will arrange for him to be here ‘at your service.’

Breakfast Chef
Gillian Wallace has joined the team this year and has proved to be a great hit with our guests! Born and bred in East Lothian she has a wealth of knowledge to the local area and is the first point of call in the morning for the weather forecast!! Her attention to detail and the fact that she can cook a fantastic full Scottish breakfast proves she is an integral part to our small team. When not cooking at Green Craig she enjoys horse riding and looking after a small army of horses, no mean feat!

Housekeeping
This team makes the house tick - and this year we have a team that rocks!! With Sally , Michele and Louise they make sure that the housekeeping standards never slip and that the guests are always happy. Replacing flowers in the rooms, updating the magazines for guests to read and taking care of all the guest’s personal laundry are just a few of their daily tasks.

Gardener
Phil Mitchell looks after Green Craig’s garden as he does most of the other Gosford policies, normally a man on a mission with acres of grass to cut and a very small weather window to do so!

Foresters
The ‘Two Jimmy’s’ as they are affectionately know can be found on the Estate most days by following the smoke and the smell of burning logs. The logs that we burn at Green Craig all come from the Gosford Estate and are gathered from trees that have either fallen or need to be felled, always delivered with a good story or information about the wild life they have come across in woods.
